How MENA Restaurants Can Generate a Monthly P&L Report

March 11, 2025·5 min read

A monthly profit and loss report (P&L) is the clearest view a restaurant owner can have of whether their business is actually making money. Yet most restaurants in Lebanon, Jordan, UAE, Saudi Arabia, and Egypt operate without one — relying instead on end-of-month cash in the register as a proxy for profit. That gap between revenue and actual profit, driven by food cost, labour, rent, and supplier invoices paid in dribs and drabs, is where most restaurant financial problems hide.

What a Restaurant P&L Report Should Include

A basic restaurant P&L has three sections: Revenue (what came in), Cost of Goods Sold (food and drink cost), and Operating Expenses (rent, labour, utilities, marketing, and other overheads). The difference between Revenue and COGS is Gross Profit. The difference between Gross Profit and Operating Expenses is Net Profit — the number that actually matters at the end of the month.

The Five Numbers Every MENA Restaurant Owner Should Know Monthly

Why Manual P&L Reports Don't Get Done

The reason most MENA restaurant owners don't have a monthly P&L isn't that they don't want one — it's that producing one manually means pulling supplier invoices from a folder, totalling up revenue from different POS systems, and putting it all into a spreadsheet. That's two to four hours of accounting work, usually on a Saturday when you'd rather be anywhere else. So it doesn't happen, or it happens quarterly at best.

This Month vs Last Month vs Same Month Last Year

A single month's P&L is useful. Three months side by side is when it becomes powerful. Seeing that food cost crept from 29% in January to 34% in March tells you something specific. Seeing that revenue in March is 18% lower than March last year while expenses are flat tells you something else. The comparison view is where restaurant owners catch problems before they become crises — and it's only possible if you have a P&L every month, automatically.
